🍚 Instant Pot Mexican Rice (Easy & Authentic Recipe)

Ingredients:

avocado oil, or more as needed

medium onion, finely chopped

large cloves garlic, minced

low-sodium chicken stock
1 ½ Cups
tomato sauce
½ Cups
salt
1 Teaspoons
ground cumin
¼ Teaspoons
pinch cayenne pepper

Preparation mode:

  1. Turn on your Instant Pot and select Sauté mode (medium heat). Add avocado oil and let it heat up.
  2. Add chopped onion and cook for about 4–5 minutes, stirring occasionally, until soft and slightly translucent.
  3. Add minced garlic and cook for 20–30 seconds until fragrant.
  4. Add the rice and stir היט thoroughly so it’s coated in oil. Cook for 1–2 minutes until lightly toasted.
  5. Pour in the chicken stock and scrape the bottom of the pot to release any browned bits.
  6. Add tomato sauce, salt, cumin, and cayenne pepper. Mix everything together well.
  7. Close and lock the lid. Set the valve to Sealing and cook on High Pressure for 7 minutes.
  8. Allow 10–15 minutes for the pressure to build before cooking begins.
  9. Once finished, release the pressure using the quick release method (about 5 minutes).
  10. Open the lid, fluff the rice with a fork, and stir once more before serving.
