🍚 Instant Pot Mexican Rice (Easy & Authentic Recipe)
Ingredients:
avocado oil, or more as needed

medium onion, finely chopped

large cloves garlic, minced

low-sodium chicken stock
1 ½ Cups
tomato sauce
½ Cups

ground cumin

Preparation mode:
- Turn on your Instant Pot and select Sauté mode (medium heat). Add avocado oil and let it heat up.
- Add chopped onion and cook for about 4–5 minutes, stirring occasionally, until soft and slightly translucent.
- Add minced garlic and cook for 20–30 seconds until fragrant.
- Add the rice and stir היט thoroughly so it’s coated in oil. Cook for 1–2 minutes until lightly toasted.
- Pour in the chicken stock and scrape the bottom of the pot to release any browned bits.
- Add tomato sauce, salt, cumin, and cayenne pepper. Mix everything together well.
- Close and lock the lid. Set the valve to Sealing and cook on High Pressure for 7 minutes.
- Allow 10–15 minutes for the pressure to build before cooking begins.
- Once finished, release the pressure using the quick release method (about 5 minutes).
- Open the lid, fluff the rice with a fork, and stir once more before serving.
