Chashushuli – Spicy Georgian Beef and Tomato Stew

Chashushuli (αƒ©αƒαƒ¨αƒ£αƒ¨αƒ£αƒšαƒ˜) is usually made with beef or veal, but there are also mushroom and chicken versions. It is cooked slowly until the meat is meltingly tender and the tomatoes turn into a thick, fragrant sauce, and is traditionally served in a clay ketsi.


🍳 How to Make Chashushuli

1. Brown the beef. Heat the oil in a heavy pot over high heat and brown the beef in batches for 5–7 minutes. Season with salt

2. Add the onions. Add the onions and cook for 5–7 minutes until soft and golden

3. Simmer. Add the tomatoes and a splash of water, cover and simmer over low heat for about 1 hour, stirring occasionally

4. Add the peppers and spices. Add the bell peppers, chili, khmeli suneli and ground coriander and cook for 15–20 minutes more until the beef is very tender and the sauce is thick

5. Finish with herbs. Stir in the garlic, cilantro and basil, cook for 2 minutes, then rest for 5 minutes before serving
