Easy One-Pot Chorizo Pasta Recipe – Quick & Flavorful Dinner

Ingredients:

chorizo, roughly chopped
150g/5½oz
garlic cloves, finely chopped
4
peppers (mixture of red and yellow), halved, deseeded and roughly chopped

mushrooms, halved
160g/5½oz button
chopped tomatoes
400 Grams
tomato purée
3 Tablespoons
dried red chilli flakes
1 Teaspoons
red wine vinegar
2 Tablespoons
spaghetti, broken in half
450 Grams
pints boiling water
1 Liters
sea salt and freshly ground black pepper
large handful basil leaves, roughly chopped

Parmesan, freshly grated
30 Grams

Preparation mode:

1. Heat a large, deep pan or casserole dish over high heat. Add the chorizo and cook for 2–3 minutes until it releases its flavorful oils.

 

2. Add the garlic, sliced peppers, and button mushrooms. Cook for another 2–3 minutes, stirring occasionally, until the vegetables begin to soften.

 

3. Pour in the chopped tomatoes, add the tomato purée, chilli flakes, and red wine vinegar. Stir well, then add the spaghetti. Carefully pour in the boiling water and mix everything together.

 

4. Bring to a boil, then reduce the heat to low. Cover with a lid and simmer for 12–15 minutes, or until the pasta is al dente and the sauce has thickened. Stir occasionally to keep the pasta submerged and prevent sticking.

 

5. Stir in three-quarters of the fresh basil and season generously with black pepper.

 

6. Serve hot, topped with grated Parmesan and the remaining basil.
