๐ Gozinaki is a traditional Georgian New Year candy made from just walnuts and honey. Toasted walnuts are cooked in boiling honey and cut into diamond shapes โ crunchy, sweet and full of festive tradition.
๐ฌ๐ช What Is Gozinaki?
Gozinaki (แแแแแแแงแ) has been made for New Year and Christmas in Georgia for centuries. It is believed to bring sweetness and prosperity for the year ahead. Families usually cut it into diamonds (rhombuses) and serve it on 31 December.
๐ณ How to Make Gozinaki
1. Toast the walnuts. Toast the walnuts in a dry pan or oven at 180ยฐC for 5โ7 minutes, then chop them coarsely
2. Boil the honey. Bring the honey and sugar to the boil in a heavy pan and simmer for 3โ4 minutes
3. Add the nuts. Add the walnuts and cook over low heat for 7โ10 minutes, stirring constantly, until the mixture darkens and becomes sticky
4. Spread. Pour onto a wet wooden board or a sheet of parchment and flatten to about 1โ1.5 cm with a wet spatula
5. Cut. While still warm, cut into diamond shapes and let cool completely
