Gözleme – Turkish Stuffed Flatbread with Spinach & Feta

Ingredients:

All-purpose flour

Instant yeast

150 Milliliters

👉 Gözleme is Turkey’s favourite street food: thin, hand-rolled dough folded around a savoury filling and cooked on a hot griddle until crisp and golden. Village women roll it out on big wooden boards at markets across Anatolia.

This version uses the most popular filling – spinach and feta – and an easy yogurt dough you can make in any home kitchen.

How to Make Gözleme

  1. Make the dough. Mix the flour, yeast, salt and sugar. Add the yogurt, warm water and olive oil and knead for 5 minutes into a soft dough. Cover and rest for 30 minutes.
  2. Make the filling. Squeeze the chopped spinach to remove excess water, then mix with the feta, onion, pul biber and black pepper.
  3. Roll. Divide the dough into 4 pieces. Roll each one on a floured surface into a very thin rectangle, about 30 × 40 cm (12 × 16 in).
  4. Fill and fold. Spread a quarter of the filling over the centre of each sheet. Fold the top and bottom edges over the filling, then the sides, to make a flat parcel. Press gently to seal.
  5. Cook. Heat a large dry frying pan over medium heat. Cook each gözleme for 3–4 minutes per side until golden and crisp, brushing the top with melted butter before flipping and again at the end.
  6. Serve. Cut into squares and serve hot with lemon wedges and a glass of ayran.
