Kubdari – Svan Meat Pie from Georgia

👉 Kubdari is a hearty meat-filled bread from Svaneti, the high mountain region of Georgia. Hand-chopped beef and pork are seasoned with the famous Svan salt, caraway and chili, then sealed inside soft dough and baked until golden.
🇬🇪 What Is Kubdari?
Kubdari (კუბდარი) is the pride of Svaneti, where it is traditionally baked for celebrations. The key is the meat: it is chopped by hand into small pieces rather than minced, so it stays juicy. Svanuri marili – salt ground with garlic, coriander, blue fenugreek, caraway and chili – gives the filling its unique flavor.
🍳 How to Make Kubdari
1. Make the dough. Mix the warm water, yeast and sugar and leave for 10 minutes. Add the flour and salt and knead into a soft, smooth dough. Cover and let rise for 1 hour
2. Prepare the filling. Mix the chopped beef and pork with the onions, garlic, Svan salt, ground coriander, blue fenugreek, caraway and chili. Knead with your hands for a few minutes
3. Fill. Divide the dough into 3 parts. Flatten each into a circle, place a third of the raw meat filling in the center, bring the edges together and seal well
4. Shape. Turn over and gently press and roll into a round about 1.5 cm thick. Make a small hole in the center for steam to escape
5. Bake. Bake at 220°C for 20–25 minutes until deep golden. Brush with butter immediately and rest for 5 minutes before cutting
