Preparation mode:
👉 Lángos is Hungary’s favourite street food: a big disc of yeast dough fried until puffy and golden, brushed with garlic water and piled with sour cream and grated cheese. You’ll find it at every beach, market and festival in Hungary.
A little mashed potato in the dough keeps it soft and fluffy inside.
How to Make Lángos
- Make the dough. Mix the flour, yeast, sugar and salt. Add the mashed potato, warm milk and enough warm water to make a soft, slightly sticky dough. Knead for 5 minutes.
- Let it rise. Cover and leave in a warm place for about 1 hour, until doubled in size.
- Shape. Divide into 6 pieces. With oiled hands, stretch each one into a thin disc about 15–18 cm (6–7 in) wide, a little thicker at the edges.
- Fry. Heat 3 cm of oil to 175°C (350°F). Fry the lángos one at a time for 1–2 minutes per side until puffed and golden. Drain on paper towel.
- Make garlic water. Mix the crushed garlic with the water and a pinch of salt.
- Top and serve. Brush each lángos with garlic water, spread with sour cream and cover with grated cheese. Eat hot.
