Menemen – Turkish Eggs with Tomatoes and Peppers

Ingredients:

Olive oil or butter
2 Tablespoons
Green peppers (Turkish sivri or Anaheim)
2
sliced; or 1 green bell pepper
Ripe tomatoes
400 Grams
about 3, grated or finely diced
Large eggs

Salt
0.5 Teaspoons
Aleppo pepper (pul biber)
0.5 Teaspoons
Black pepper
to taste
Small onion

Feta cheese

optional, crumbled
Fresh parsley
chopped, for serving

Preparation mode:

👉 Menemen is the star of the Turkish breakfast table: eggs gently cooked in a thick sauce of tomatoes and green peppers, eaten straight from the pan with fresh bread. It takes 20 minutes and one pan.

Like shakshuka, but softer and creamier – and every Turkish family has its own way of making it.

How to Make Menemen

  1. Cook the peppers. Heat the oil or butter in a frying pan (or a Turkish sahan) over medium heat. Add the peppers (and onion, if using) and cook for 3–4 minutes until soft.
  2. Add the tomatoes. Add the grated tomatoes and salt. Simmer for 6–8 minutes, stirring now and then, until most of the liquid has cooked off and the sauce is thick.
  3. Add the eggs. Crack the eggs into the pan. Gently stir them through the tomatoes for 2–3 minutes until just set but still soft and creamy. (For a different style, leave the yolks whole and cover the pan until the whites set.)
  4. Finish. Sprinkle with pul biber, black pepper, feta and parsley. Serve straight from the pan with plenty of bread for dipping.

Onion or no onion? This is Turkey's great breakfast debate! Both versions are traditional – onion makes it sweeter, without onion it's fresher and more tomato-forward.

Tip: use the ripest tomatoes you can find; in winter, a spoon of tomato paste helps.
