But many people are disappointed the first few times: soggy fries, dry chicken, smoke, or a basket that is impossible to clean. Almost always, the problem is one of these 12 common air fryer mistakes. Fix them and your air fryer will finally live up to the hype.
1. Overcrowding the basket
This is mistake number one. An air fryer is really a small, powerful convection oven: it works by blowing hot air around the food. If pieces are piled on top of each other, the air can’t reach them, and food steams instead of crisping.
Fix: Cook in a single layer with a little space between pieces. It is faster to cook two small batches than one big soggy one.
2. Using no oil at all
“Oil-free frying” sounds great, but most foods brown and crisp much better with a tiny amount of fat. Without it, potatoes turn leathery and breadcrumbs stay pale and dusty.

3. Spraying aerosol cooking spray in the basket
Canned cooking sprays often contain propellants and additives like lecithin that can build up into a sticky layer and damage the non-stick coating over time. Many air fryer manufacturers warn against them in their manuals.
Fix: Use a pump-style oil mister filled with plain oil, or brush oil onto the food instead of the basket.

4. Using too much oil
The opposite problem. Excess oil drips to the bottom of the basket, burns and fills your kitchen with smoke – and it makes food greasy instead of crisp.
Fix: Toss food in a bowl with a small amount of oil, or mist it lightly. If you cook fatty foods like bacon or chicken thighs, pour off the fat between batches.
5. Not shaking or flipping
The top of the food gets the most heat. If you never move it, the bottom stays pale.
Fix: Shake the basket every 5 minutes for fries, nuggets and vegetables. Flip larger pieces like chicken breasts, fish fillets or patties halfway through.
6. Skipping the preheat
Some models don’t need it, but for many air fryers a 3–5 minute preheat makes a real difference, especially for meat and frozen foods that need to start sizzling right away.
Fix: Check your manual. If in doubt, run the empty air fryer for 3 minutes at the cooking temperature before adding the food.
7. Wet batters
Liquid batters – like tempura or beer batter – simply drip through the basket and make a mess. The air fryer has no hot oil to set them.
Fix: Use a dry coating instead: flour → beaten egg → breadcrumbs or panko, then mist with oil. This works brilliantly for schnitzel, fish and crispy chicken.
8. Putting parchment paper in an empty, preheating basket
Loose parchment paper is light. In an empty air fryer, the fan can lift it into the heating element, where it can scorch or even catch fire.
Fix: Only add parchment liners when the food is on top to weigh them down, and use perforated liners that let the air flow.
9. Using oven recipes without adjusting
Air fryers cook faster than ovens because the hot air moves so quickly around a small space.
Fix: As a rule of thumb, lower the oven temperature by about 20°C (25°F) and reduce the time by about 20%. Start checking early – you can always add a few minutes.
10. Not drying food first
Water is the enemy of crispiness. Wet potatoes, damp chicken skin or freshly washed vegetables steam before they brown.
Fix: Pat everything dry with paper towels. For extra-crispy fries, soak cut potatoes in cold water for 30 minutes to remove starch, then dry them very well before oiling.
11. Cooking cheese or light seasonings uncovered
The strong fan can blow loose grated cheese, dried herbs and light toppings around the basket – and onto the heating element.
Fix: Add delicate toppings in the last 2–3 minutes, press them gently onto the food, or mist them with a little oil so they stick.
12. Forgetting to clean it
Old grease in the basket and drawer burns every time you cook, causing smoke, bad smells and food that tastes stale.
Fix: Let the basket cool, then wash it with warm soapy water and a soft sponge after every greasy use. Never use metal scourers on the non-stick coating. Once in a while, wipe the heating element (unplugged and cold!) with a damp cloth.
